The purpose of the first phase is to kick your cravings. I first started making these make ahead egg muffins years ago when i saw them in the south beach diet cookbook. Enjoy 1 muffin as a serving.

My favorite part is that they keep well in the fridge for days, and can also be frozen!

During phase 1 of the south beach diet, you should avoid starchy vegetables such as potatoes and sweet potatoes, corn, beets. Just starting the south beach diet and i wanted something that traveled well for breakfast. They're easy to make ahead for meal prep, busy mornings & holiday brunch. First with goat cheese, cherry tomatoes and mexican veggies, sprinkled with parmesan and second time with tuna, onion and green olives.
